MOSH / MOAH in cocoa and cocoa butter (P1918-MRT)

The determination of MOSH and MOAH in food remains challenging, although large parts of the analytical procedure have been highly automised. Besides the instrumental analysis, the sample pre-treatment (specific clean-up) as well as the integration and interpretation of the resulting chromatograms are critical steps in analysing MOSH and MOAH and often a cause of deviating results.

Two test materials are offered in P1918-MRT:

  • Cocoa powder:
    The cocoa powder is spiked with MOSH and MOAH.
    50 g of the spiked cocoa powder is provided as test material.
    The corresponding untreated cocoa powder (50 g) is available
    as blank material upon request.

  • Cocoa butter:
    The cocoa butter is spiked with MOSH and MOAH.
    50 g of the spiked cocoa butter is provided as test material.
    The corresponding untreated cocoa butter (50 g) is available
    as blank material upon request. 

The results are evaluated with respect to

  • the comparability criterion (z-score)
  • the trueness criterion (recovery of the spiked level, as far as scientific reasonable)

And beyond the pure statistical evaluation? 

P1918-MRT is a method ring test. That means, the evaluation is not limited to the pure statistical evaluation of the provided data. We will have a closer look at the small but important details, which may highly influence the outcome. 

For that purpose,

  • all participants are asked to provide the chromatograms of both test samples and blank samples including the integration of the humps. All chromatograms are published (anonymised with the lab code) in the final report.
  • questionnaire is provided related to the analytical details like internal standards, sample-pretreatment, etc.

The analytical details, which are mentioned above are summarised in a separate part of the final report. For reasons of fairness, only those participants, which provide details and chromatograms will receive the second part of the report. These data, anonymised and summarised, will help to identify shortcomings, built the basis for further discussion and thus help to enhance the quality of the applied methods.

The participation fee is 900 EUR, blank materials are available at a price of 70 EUR each upon request. 

The test material is shipped by express courier. Shipping costs are included for shipment to EU countries. Additional shipping costs may apply for shipment to Non-EU countries.
